Method

  1. Grate the potatoes and onion. Squeeze the mixture very dry in a clean towel.
  2. Mix with the eggs, flour, salt, and pepper.
  3. Spoon thin rounds into ¼ inch of hot oil and fry until deeply golden on both sides.
  4. Drain on a rack or paper and serve immediately.
