Method
- Grate the potatoes and onion. Squeeze the mixture very dry in a clean towel.
- Mix with the eggs, flour, salt, and pepper.
- Spoon thin rounds into ¼ inch of hot oil and fry until deeply golden on both sides.
- Drain on a rack or paper and serve immediately.
