Method
- Bloom the yeast in warm milk with a pinch of sugar. Mix with the flour, remaining sugar, eggs, butter, and salt.
- Knead until elastic, adding raisins if desired. Let rise until doubled.
- Shape a round loaf, reserving dough for a braid or cross. Rise again, brush with egg, and bake at 350°F for 35 to 45 minutes.
