Method

  1. Pack the bologna and onion into a clean quart jar.
  2. Bring the vinegar, water, sugar, salt, and spices to a brief boil, stirring to dissolve.
  3. Cool the brine for 10 minutes, pour it over the bologna, cover, and refrigerate.
  4. Wait at least 3 days before serving cold with crackers. Keep refrigerated and use within 2 weeks.
